Salted Chocolate Cherry Nut Bars

It’s Fat Tuesday, but why make yourself sick with overly-indulgent treats? These vegan cherry nut bars drizzled with chocolate and sprinkled with pink Himalayan salt taste decadent, but they’re good for you!

Salted Chocolate Cherry Nut Bars

ingredients:

1 cup chopped raw pecans

1 cup chopped raw cashews

1 cup slivered raw almonds

1 cup dried cherries

1/3 cup brown rice syrup

1 teaspoon cinnamon

1 teaspoon ground cardamom

1/4 teaspoon sea salt

1/3 cup dark chocolate pieces

pink Himalayan salt for sprinkling

 
method:

Preheat the oven to 300°. Spread the chopped pecans and chopped cashews out on a baking sheet and pop them in the oven for 10 minutes until lightly toasted. Allow them to cool for a few minutes when they’re done and out of the oven.

Heat the brown rice syrup in the microwave for about 20 seconds to liquify. In a medium bowl, combine the toasted pecans and cashews, the almonds,  cherries, brown rice syrup, cinnamon, cardamom, and sea salt. Mix thoroughly.

Line an 8×8 deep-sided baking pan with parchment paper, then spread the mixture into the pan, pressing it down and into the corners with a spoon or spatula. Bake for 15 minutes, then set the pan in the refrigerator on a dish towel or hot mitt for about 15 minutes until cooled off.

Pull the baked goodness out by the parchment paper and set on a cutting board. With a sharp knife, slice the square in half, and then slice each half into 1-inch wide bars.

Put your dark chocolate into a small bowl and stick it in the microwave for 30 seconds. Stir, then put it back in for another 30 seconds. Repeat until the chocolate is melted. Drizzle the chocolate over your bars, then sprinkle with the pink salt.

    These look positively mouthwatering! I share the same sentiments about cramming in unhealthy food on Fat Tuesday. Why not go indulgent without actually being indulgent? :)
