Fig Hazelnut Granola

I’ve recently become reacquainted with the delight that is roasted hazelnuts. And they’re so much nicer when you roast them yourself instead of buying them pre-roasted from the store. I picked up a bag of dried figs on my last shopping trip, not sure what I was going to do with them, and today I realized they’d go beautifully with roasted hazelnuts. I’m still on my granola kick, so I whipped up this easy-but-amazing granola that also incorporates orange zest (which complements both figs and hazelnuts and works magic with both together).

ingredients:

2 cups rolled oats

1/2 cup raw hazelnuts, crushed

2 tablespoons light brown sugar

1 teaspoon allspice

2 tablespoons maple syrup

2 tablespoons canola oil

1 teaspoon vanilla extract

zest of one orange

1/2 cup dried figs, chopped

 
method:

Preheat the oven to 300°. Stir the oats, hazelnuts, brown sugar, and allspice together in a medium-sized mixing bowl. In a separate small bowl, combine the maple syrup, canola oil, vanilla extract, and orange zest. (Save the dried figs for later.) Pour the liquid mixture over the oat mixture, and give it a good stir until the dry ingredients are coated.

Spread the mixture evenly in a deep-sided baking sheet, like a jelly roll pan. Pop it in the oven for 10 minutes, then stir it around to prevent burning. Bake for 10 more minutes, then pull it out and set it (still in the baking sheet) on a wire rack to cool for another 10 minutes. Pour the granola back into your mixing bowl, and stir in the dried figs. Serve with almond milk for a perfect bowl of Saturday morning goodness.

ideas:

Double the recipe, and make it on a weekend morning — whatever you don’t eat (if you can keep from eating it all!) will store in an airtight container for the rest of the week’s breakfasts.

    Oh Laura this looks so delicious! I will definitely be trying this one. Where do you get your nuts?

      Hey Elyse! Oh that’s so crazy about the Nutella thefts! Although I can understand why! :) I get mine from Whole Foods — I really need to buy stock in the company, with how much I spend there! Haha!
